Apple and Sweet Potato Casserole

2 Sweet Potatoes, peeled and cubed
2 Granny Smith Apples, peeled cored and sliced
100g/4oz Brown Sugar
120ml/4fl.oz. Water
1/2 teasp Ground Cinnamon
75g/3oz Raisins
25g/1oz Butter
25g/1oz Plain Flour
3 thin slices Lemon


1. Preheat the oven to 180C, 350F, Gasmark 4 and lightly grease a 1.5L/2 1/2 pint ovenproof dish.

2. Place alternate layers of sweetpotatoes and apples in the dish.

3. Place the brown sugar, cinnamon,raisins, butter and salt in a saucepan. Add 90ml/3fl.oz. Of the water, bringslowly to simmering point and cook for 5 minutes.

4.Meanwhile, in a small bowl, stirtogether the remaining water and flour and add to the brown sugar mixturestirring well.

5. Pour over thesweet potatoes and apples, place thelemon sliceson top, cover with foil or a lid and bake for 20minutes, or until the sweet potatoes and apples are tender. Servehot.

Lovely served at Christmas with the Roast.
