Braised Rabbit Legs

4 rabbit legs

300 g small onions, whole

300g chopped tomatoes, peeled

1 glass of white wine

2 glasses of water

Garlic

Rosemary

Salt & pepper

Rabbit seasoning

100 g black olives

Olive oil

1. Sprinkle some salt, pepper and rabbit seasoning on the rabbit legs. Rub some olive oil and put them in the heated oven till they are golden brown.

2. Heat some olive oil in a deep frying pan, add the garlic and the onions. Fry to a golden colour. Add the rosemary, tomatoes, wine and 2 glasses of water. Bring to the boiled and simmer.

3. Put the rabbit legs into a casserole or baking dish. Add the sauce and olives. Cook in the oven for approx 90 minutes on a low medium temperature.

4. Serve with roast potatoes vegetables and couscous.
