Casseroled Liver with Apples

Ingredients
450g/1lb Calf’s Liver
25g/1oz Flour
Salt and Pepper
1 teasp Dry Mustard
25g/1oz Butter
2 tbsp Oil
2 Cooking Apples, peeled, cored and sliced
2 Onions, sliced
8 Rashers Streaky Bacon
300ml/10fl.oz. Light Stock

Instructions

1. Preheat the oven to 180C, 350F, Gas mark 4. Grease an ovenproof casserole.

2. Mix together the flour, salt, pepper and mustard on a plate. Cut the liver into thin slices and coat with the seasoned flour.

3. Heat the butter and oil in a frying pan and brown the liver on all sides. Put alternate layers of liver, apples and onions in the prepared casserole and top with the bacon rashers.

4. Add the stock, cover and simmer for 1 hour. Remove the lid and continue to cook for a further 30 minutes. Serve hot.
