Grilled Salmon – Salamun Mixwi


fresh salmon

olive oil

balsamic vinegar

glass of white wine

pepper corns


fresh mint, finely chopped

freshly squeezed lemon juice

grated lemon rind

lemon slices


  1. Put some olive oil, balsamic vinegar, wine, juice and rind of a lemon, finely chopped fresh mint and seasoning in a bowl.  Mix well till all the ingredients are blended.
  2. Put the fish in this marinate and leave for about 30 minutes.  The fish should be completely covered.
  3. Preheat either the grill or else a large frying pan.  When the pan or the grill are well heated remove the fish from the marinate and grill on both sides.
  4. During cooking add some more chopped fresh mint.
  5. Serve hot with fresh lemon slices.
