Grilled Swordfish – Pixxispad Mixwi

Ingredients

4 good portions of swordfish

oil

100g onions

garlic cloves

fresh mint finely chopped

seasoning

freshly squeezed lemon juice

fresh sage

green peppers

pimentos

Method

  1. Peel and chop the onions and garlic and put in a bowl together with oil, mint seasoning and lemon juice.  Mix well.
  2. Put the swordfish in this mixture and leave to marinate for 1 hour.
  3. Preheat the grill.
  4. Remove fish from the marinate and grill on both sides till it is a nice golden colour.
  5. During grilling frequently baste the fish with the marinate sauce.
  6. Put cook fish in a serving dish and decorate with sage, green peppers and pimentos.
