Linguine Pasta With Green Beans recipe
480 g (1 lb) french bean (green bean)s
480 g (1 lb) linguine
2 handfuls basil leaves
90 g (3 oz) cup grated pecorino (romano) cheese
120 ml (4 fl oz) 1/2 cup extra-virgin olive oil
salt and pepper
method
1. Trim the beans, discarding the tops and tails.
2. Bring a saucepan of water to the boil, add salt and the linguine.
3. Boil for 3 minutes then add the beans and cook for 6 minutes more.
4. Meanwhile, put the basil, a little salt, pepper to taste, the pecorino cheese and the oil into a blender and blend until creamy.
5. Add 90 ml (3 fl oz) 1/3 cup of the cooking water and mix for a few seconds.
6. Drain the pasta and beans and arrange in a bowl.
7. Add the basil and cheese sauce, mix well and serve immediately.
