Stuffed Globe Artichokes – Qaqoċċ mimli


4 artichokes

150g fresh breadcrumbs

75g anchovy fillets

50g olives

crushed garlic

oil and vinegar

salt and freshly ground pepper



  1. Chop the anchovy fillets, garlic, olives and parsley and put in a mixing bowl.  Add the breadcrumbs and mix well.
  2. Add oil and vinegar and work into a dry paste.  Season according to taste.
  3. Wash the artichokes and fill between the leaves with this mixture.
  4. Place the artichokes upright in a small saucepan.  Half cover them with water and add some oil.  Cover them with a lid, bring them to the boil and simmer for 1 hour.
  5. Serve hot.
